Keepin' Cool: Raspberry, Lime & Ginger Agua Fresca

Man, it's been hot and humid. Yesterday felt like a sauna. Not that I'm complaining, of course, just making an observation. You can't complain about summer in Minnesnowda, right? Right. Sippin' on this agua fresca has certainly kept me cool. This weekend is supposed to be even hotter, so I surmise there will be more agua fresca recipes in my future. For now, enjoy this one.

Raspberry, Lime & Ginger Agua Fresca

Makes: ~6 cups

Preparation Time: 10 minutes (+ 1-2 hours to let flavors infuse)

Ingredients:

4 limes

1 handful of raspberries, rinsed

2 tbsp. fresh ginger, minced (I keep this in the fridge at all times)

1/4 c. sugar

2 tbsp. honey

6 c. water

Method:

1. Using a citrus juicer (or by hand), juice limes into blender pitcher. Add raspberries, ginger, sugar, honey and two cups of water (the other four cups you will add after blending). Puree until smooth.

2. Pour blender contents into a pitcher, along with the additional four cups of water. Let sit in fridge for an hour or two, letting the flavors infuse. Stir well and serve over ice.
